Cashew Grades

Our cashew nut processing operations involve unique combination of traditional and state-of-the-art technology to get maximum output with best Quality Standard.

At Diosis, We select and process finest quality of Hand-Picked Raw cashew nuts available during harvesting season. The Hand Picked Raw Cashew Nuts are Sun Dried to reduce moisture that helps in preserving and storing of Raw Cashew Nut for entire year. Immature and Oily Nuts are separated during the sun drying process which ensures storage of only Quality Raw Cashew Nuts.

Production & Processing

Drying

Raw cashew nuts sun-dried for 2 days and are stored in a cool room. The moisture content is reduced to 7%-8% and the colour changes to brown.

Roasting

Raw cashew nut are roasted for 30 min in a steaming roasting process and left to cool for 10 min.

Cooling

Roasted cashew nuts are taken to a separate room, being spread on the floor and left for 2 to 3 days to cool down. They are then transferred to the next step once they are cooled.

Shelling

2 people on one shelling machine. The first person cut the cashew nut and the second person opens the shell with a pin separating the kernel from the shell. Daily production is about 30kg per team. Their hands safe

Hot chamber drying

The cashew nuts are transferred in perforated aluminium trays to a hot chamber for drying. The electric or steam drying machine operate at a constant temperature of about 80 deg. C. The moisture content is reduced from 7% to 3% to prevent deterioration. Cashew nuts are then taken to a separate room for cooling for a day.

Peeling

Major part of the employee work in this peeling unit and the production per employee is about 10kg. Each employee removes the husk from the kernel with a small special peeling knife. The kernels are then transferred to the Grading sector the next day.

Grading

With this process cashew kernels are categorized and given grades. The different rates depend on the different grades.

Packing

Here we ascertains that the finest of nuts are been properly packed in hygienic conditions, to keep our kernels fresh, crispy and tasty.
